I just got done cutting up Dalton's deer and packaging it. I noticed when I skinned and qtrd it it took me almost 45 minutes where I used to could do that in less than 20 minutes. As a matter of fact the yearling I shot at bowcamp took less than 6 minutes to skin and qtr (had a bet on it) Saturday I had an excuse tho, I had to hang him from a hook in my garage rather than the tree I normally use and I was afraid of pulling the hook out of the rafters.
Tonight it took a little over an hour to process it, again this used to take me 45 minutes at the most. Here's what I do:
Cut two roasts out of each back qtr, then strip steak the other roast and cut the remaining up for burger. Trim the white tendons and grissle from the backstraps and cut them in half. That way I can steak them out if I want steaks or put them on the grill whole (well, halves) if I want to grill them and they don't dry out. Cut both front shoulders into stew meat/burger.
How do yall do it and how long does it take (assuming you lazy bassturds don't use a processor.

I skinned and gutted a friends deer yesterday but I didn't pay attention to how long it took. I don't think it took me any longer than 20 minutes though. I know it only took me 10 minutes to take the shoulders off, cut out the backstraps and tenderloins, saw off the hams and trim all the good neck and rib meat and throw it in cooler. I'll time how long it takes me to cut up the hams and shoulders when I do it. And no I don't pay somebody to process mine because I am poor.

I just figured it out....
DS is allergic to deer hair, therefore he tries to exterminate every deer in SC.
Health reasons....

I do it just about the same as 4pt, but it has always took me atleast 45 minutes or longer. I guess I'm just extra careful or extra slow one or the other.

I must be doing something wrong cause it takes me alot longer. I can skin it and quarter it out in 30 minutes or so but once I get it home and start trimming and all it probably takes me 2 hours. Then i still have to grind it into burger and cube whatever I am going to cube. I figure from the time it hits the ground to finished product in the freezer I have about 4 hours tied up into it. Of course when I grind or cube the meet I usually do 50lbs or so at a time.
