When having large game animals (deer, elk, moose, etc) processed, have large muscle meats done as roasts. By doing this, you reduce likelyhood of major freezerburn as well as multiple options when you thaw to cook. Roasts can be turned into steaks (cubed or other), medalions, cut up for stew, roasted whole, ground for burger or sausage, etc.
