what do you do to make the egg shells peel easily off the shell....the one's we're doing seem to take egg with it leaving us with just yolk.

salt water then drop in cold water while still hot it shocks them

I love boiled eggs and always had difficulty boiling them (they either cracked while boiling or I'd peel all the whites away) until my grandmother shared this little "trick" with me. Boil your eggs in salt water for 20 minutes, drain hot water from the pan, shake the eggs around in the empty pan crackin the shells, then IMMEDIAYELY run cold water over the eggs and they should then peel away from the shell leaving the whites intact.

20 minutes if you like a hard cooked egg. I like a soft and runny yolk so I only boil 10 minutes. Carboat and Biggie are right......you need to shock the egg after you have boiled them. This will do 2 things: 1) it halts the cooking process and 2) it will help you get the shell off and not take the egg with it. When the timer goes off, dump the boiling water out and put the eggs in ice water with tongs. Let em sit for 3 or 4 minutes. Biggie, to keep the eggs from cracking while boiling, put the eggs in the water when you put the pan on the stove not after the water is already boiling.

thanks guys ;D....i usually don't eat them but use them to make tator salad a few times a year....usually then i just let them boil until they do crack so i know they are done done.

It helps if you use eggs as fresh as possible.The membrane between the shell and the white toughens up as the eggs age.
I love boiled eggs,specially pickled eggs. ;D.
