What is it?
I'm not that experienced in fly fishing, but it seems like I catch the most fish on an Elk Hair Caddis.

Elk hair caddis is a good all around fly. It can represent tons of good fish food...from an actual caddis fly to a moth, ect.
Since a trout gets somewhere around 90% of its food under the water as opposed to on top of the water, I like to throw a wet fly when the day is winding down and I'm on the last train to skunkville. My personal favorite is a size 14 olive wooly worm. They have bailed me out so many times I cannot count. A wooly booger is a good choice too.
