We pretty much call em just like you do.......there are a few fish that we don't have here that you guys do have.
we call:
rainbows=rainbows ;D flatheads=flatheads, yellow cats, apolusus small mouth=smallies, bronze backs white crappie=crappie black crappie=crappie........and when we catch both, we usually pull one of both out and argue over which is which. Blue gill=sunfish, perch, blue gill Red ear=sunfish, perch Hybrids=hybrids.....I heard em called coke bottles once.
Pretty much everything else, we either don't have here or call the same thing.

The stone cat or as we call them Mad Toms are used for bait. We catch them in the upper end of rivers and creeks with stone bottoms. I have never caught one in a river that had a mud bottom. They only get to be 8 or 10 inches long. The 4 to 8 inch size works the best on smallies. We use them to catch Smallies and Black Bass. Every now and then a Muskie will take one.
As a rule I don't fish with mad toms when on muskie waters. Muskies take a tom very deep in their mouth, not a good thing on a fish that goes nuts when you hook them. No need to take the chance of killing them.

I don't know, we always called the yellow cats the channel cats and vice versa...I think it just sorta depends on how my parents called them when i was growing up catching these things.
