how much meat do you usually get when you bring a deer to the processor? usually we do our own and we end up with tons but a friend of ours got a doe and decided we'd make burger out of her and spilt the cost....well for $20 we got 6-1lb. packages of burger and i'm not happy at all. that's more expsenive than organic beef.

Rule of thumb is that 65-70% of live body weight is bone, hide, guts, & other waste. So a 100# deer should result in 30-35# of meat. Processors usually mix 20-25% beef fat with the deer meat for hamburger. So, out of your 6# of hamburger, only 4.5-5# was actually deer! That means that if all the deer meat was used, the deer live weight was about 15-20#.
Either you had them process a fetus or somebody gyped you.
Invest in an electric meat grinder & do it yourself! I know most processors are ethical, but you never know for sure. Also, I take great pride in the "from field to table" complete experience.

Yeah......my processor charges me $50 a deer and I get a ton of meat back. Well, not a ton but alot.

correction.....it was 12pks weighing 1lbs. each...we got half so that's where i got the 6 from. think it's total crap...at first my neighbor was giving us the entire deer....then minus a couple roasts for his other buddy...that got canceled so we all agreed on hamburger....think my neighbor just changed his mind about givin' us the deer meat and didn't have the gahunga's to say anything.

How big was the doe? Where was it shot?

don't really know where it was shot....all i know is that the first shot didn't kill her so he had to shoot her in the neck when he walked up on her. she was an average size doe...around 100.

6lbs!!! I'd be demanding some meat. You should figure on getting back at least 35% of the live weight.. Unless the doe weighed only 20 pounds.

My processor usually just asks me how much I want. I think your neighbor was putting one on you.
I went to one processor that ripped me off. I still tell anyone around there who wants to listen about them and I hear many of the same stories. I figure it'll come back on them one day.

she was close to 100 give or take a few...very nice doe. we just know never to have it done by this particular person again. 30 pounds of meat before grinding. Now if they added enough fat to make it 80% lean you should have 35 to 40 pounds total.

I would call your processor and talk to them (nicely). It definitely sounds like you did not receive all of your deer. It may be there were other paks that were misplaced or something.
I do most of the processing of large cuts myself but when I want a deer processed, I use Smitty's Meat Market over in Pine Hills. My favorite processed cuts are cubed steaks (from the hams) and deer burger from the rest. They do an excellent job in making deer burger and cubed steaks, will pak/wrap/label in whatever size paks you want, and they also double wrap (one layer cellophane wrap & one layer of freezer paper) to prevent freezer burn.
I have found deer burger they processed for me back in my freezer that is over two years old and it is still good. Because venison is so lean, they mix a good grade of corn fed beef fat in with the venison when grinding the deer burger. They use about a 1 x 3 ratio and it comes out great. Makes the best chilli and speghetti you ever laid in your mouth. Of course I remove the tenderloins and backstraps before sending to the processor. They charge about $35 for a deer and it is well worth it.
I can't remember how much processed meat I get back from one deer but it is quite a bit. Here is a guess; a typical doe or 1 1/2 year old young buck weighs about 90-110lbs +-. Field dressed that probably drops to about 50-60 lbs. Boned out that drops to about 30-40lbs. Trimmed up, processed, and wrapped with some deer burger and steaks I would guess you should receive back somewhere around 30-40 lbs or so. I have never weighed one before and after processing so I am not sure about this but it does come out to be much less than live or field dressed weight. Be sure to cut out and keep the tenderloins and backstrap before sending to the processor. :-)
