Ive been smoking deer hams for many years but the one I smoked this weekend was the best Ive ever tried.
This time I injected some honey terriyaky marinade and sprinkled the ham with a heavy dose of meat tenderizer and wrapped it in fatty bacon.
I smoked the ham for 6.5 hours on a Brinkman electric smoker using hickory chips on the element and applejuice in the water pan. I let it cook to a medium rare, (around 150 degrees). Man was it good.
Ya'll need to try this.

That sounds really good dude.
Apple juice in the water pan.....great idea. I'll try that.
I usually put 4 quartered onions in the pan with the water.

I'm gonna try and smoke a deer ham.And I may get a chance sooner than I think.There's a small town south of here that is over run with deer, and they're going to open a special season up on em ;D.One family has had the misfortune of hitting 9 deer this winter  . |

Talk about your bad luck.
There's not much hunting pressure down there and I'll bet there's more than a few land owners who don't let anyone hunt.
