I used to have a Mexican tailor that made excellent salsa. He gave a jar out at Christmas every year. I asked him once for the recipe.....I'll see if I can find it and post it.

Just made the best ever:
2 cans of stewed tomatos
2 whole jalapenos (Hatch brand and the 2 biggest I could find in the jar)
1 T salt
1/4 cup cilantro
3 cloves of garlic
1/2 a white onion
juice of a lime
1 T black pepper
Throw all the above into a blender and blend until it's the consistancy that you like. Makes ALOT.
I'm takin whats left to work tomorrow.

The one I have been using:
4 Large tomatoes, seeded, chopped
1 large onion, chopped
1/2 green pepper, chopped
2 large jalapeno peppers, seeded, chopped
1 chili, seeded, chopped
2 cloves garlic, minced
1/4 cup fresh cilantro, minced
juice of 1 lime
salt and pepper to taste
