4 Wild Hog Ham Steaks, cubed, marinaded in Italian Salad Oil (4hrs) 2 medium size Potatoe , sliced in 3/4" slices 1 Yellow Onion, peeled, cut in to 1/4's (wedges) 2 tblspn Mexican Spice, rub on meat after marinaded Marinade hog in italian salad oil for 4 hr. , remove from bowl and rinse and pat dry. Sprinkle 2 tblspn mexican spice on meat. Build kakbobs, start off with onion then hog meat then potatoe, repeat this again on same skewer. Continue this until all contiments are on skewers. Note* if using bambo skewers soak for 2 hrs to pervent burning. PLace on grill over high heat on upper rack on gas grill. I like to place a packet if Mesquite chip soak in water on bottom of grill rack to smoke and get that great flavor of mesquite. 20 minute cooking time Remove off grill place on plater and spoon the sweet chipole dressing over kabobs. Sweet Chipotle Dressing 1 tbl spn diced yellow onion 1 tbl spn chopped garlic 1/4 tea spn ground cumin 1/2 cup diced tomatoes 2 tbl spn dried cilantro, or fresh 1/2 cup rice wine vinegar pinch of salt pinch of black pepper 2 tbl spn honey 1 tbl spn chipolte chili powder 1/4 cup olive oil Place all the ingredients except oil in blender or food procssor. Blend until smooth, slowly ad oil careful not to cause the dressing to break. (seperate)
