Green Chili Stew again tonight........it's addictive. I halfed it and will still have enough to take to work.
Heres the recipe:
Green Chili Stew
3 medium onions, chopped medium 12 garlic cloves, minced Vegetable oil 3 - 4 cups flour 1 - 1 ½ cup Old Bay Seasoning 6 lbs. Boneless Pork Loin or Shoulder, trimmed of fat and cut into one inch pieces (trimmed should yield around 5 lbs.) 5 lbs Roasted Hatch (New Mexican) Green Chilies, roasted, peeled, seeded and chopped (wear rubber gloves) OR 56 oz. canned Hatch chopped green chilies 4 cups of water 8 cups of chicken stock 2 lbs. White boiling potatoes, cubed small. 20 oz. can of tomatillos, chopped or 12 fresh tomatillos chopped medium 6 Jalapenos peppers, 4 -6 Serrano peppers 20 oz. can of chopped tomatoes 1 bunch of cilantro ½ - 1 teaspoon each of ground cumin, thyme, coriander, oregano, cayenne, red pepper flakes and paprika. 5 bay leaves. You can add a little Old Bay to taste as well, if necessary. Salt and Pepper to taste.
In a large heavy kettle, cook the onions and 8 of the garlic cloves in oil over moderate heat, stirring, until the onions are soft. Set aside.
After your meat has been cubed, dredge/coat in the Old Bay and Flour mixture and cook until browned in oil.
Add your meat to the onions and garlic in a LARGE stockpot. Add the water, 6 cups of chicken stock, salt, spices, tomatoes and tomatillos. Core and/or seed peppers (depending on heat desired). Mince Serrano’s; Chop or slice Jalapenos and add all peppers to pot. Bring to boil, then simmer this uncovered for 90 min. Add broth as necessary to keep pork etc. covered. Stir in the potatoes, making sure they are covered. Simmer for 30 minutes until pork and potatoes are tender. Add the remaining 4 garlic cloves and ¾ cup chopped cilantro (reserve the rest for garnish). Salt and Pepper to taste, adjusting other spices as well. Simmer for 20 - 30 minutes. Serve over rice and/or with flour tortillas. You can also use corn in lieu of potatoes. Makes one big ass pot. Freezes well.
This recipe can also be halfed.
