They taste like duck ;D. I like the big northern mallards and canada geese after they been on the stubble fields for a couple weeks eating grain. The geese that eat grass and alphalpha don't taste as good to me.

Woodies are the best. They are grain eaters primarily so they don't get to fishy tasting like mallards that eat fish and grasses. A good wood duck reminds me of dove but more tender. Any duck tastes good in gumbo. It's alomost like gumbo was invented for mallards and of course shrimp.

Chili/gumbo is about the only way I eat duck. As for goose I just give away. Last year me and my hunting buddies dressed and gave 17 canadas to the local union misson that proved a hot dinner on xmas for those in need. Hopefuly we'll be able to do it this year too.

I learned my lesson on eating Mergansers a few years back. NEVER again will I eat, or attempt to eat one of those nasty smellin' tastin' birds. I wanna puke just thinking about it.

Woodies, mallards and teals are my favorite. My wife WON'T touch em though. I like to grill the breast with a slice of bacon around it and as it just starts to get done, I roll the breasts around in orange marmalade and put em over the coals to "glaze". Gumbos and chillis would be my next favorite way to eat em.

Keep this in mind- most puddle ducks eat small invertabrae and acorns. Divers eat mussles, small fish, and invertabrae also. Divers are good for gumbo. The wood duck is the best tasting out there. Mallards come in a distant second. The diet makes the meal.

I like getting a big northern and roasting it like a honker. Other than that i have to crock pot them with lots of veggies and cream soups or i dont really like the taste all that much. It sure aint like chicken.
