I got some summer sausage along with the recipe from one of my dads friends today and thought I would share it with you folks. It is far and away the best Summer sausage i've ever eaten. Here is the recipe as it is written down....... Take 4lbs ground meat, 1/4 cup curing salt(tender quick) 2 table spoons liquid smoke, 1 and1/2 teaspoons garlic powder and 1 1/2 teaspoons black pepper. Mix using hands for 15 minutes then roll 1 pound rolls in foil and refridgerate for 24 hours. after the 24 hours make holes in the bottom of the 1lb foil rolls for drainage during the cooking process. Bake at 225 degrees on oven rack for 4 hours. Pat dry, re-wrap, cool, refridgerate.
Like I said this blows any summer sausage/ jerky i've ever eaten away
