Does anyone NOT take the tenderloin out of their animals? There was an article in this months Field & Stream that suggested that not everyone does.
That's crazy........if anyone leaves it they are leaving the BEST part of the animal.

A do take it, but because it is such a small peice, I give it to my parents.

Slice it into medallions and saute' the medallions in butter with shallots and sherry until rare.

I keep the tenderloin (both of them) and the ribeye (same cut, just on the underside of backbone, both of them also). The rest is turned into venison burger or bologna, since few in my family will eat venison.

I dont always. Mainly due to I dont cook and mom usually screws it up.

we call them "fish" and they usually get eaten that same nite.....kinda a celebration thing.

Hey FLH, here in MD, PA, & WV, they call the ribeyes "Fish" or "Bread & Butter". Whatever you call the tenderloins and ribeyes, I keep them out of all deer!!

Take em marinate them in Dale's seasoning wrap em in bacon and put them on the griil. It will make your tongue slap your brains out trying to get to em.

i still think that they should be called something else besides fish.....fish are fish ;D......for the longest time i had NO CLUE what everyone was talkin' about until my neighbor/buddy pointed them out last year.
