Here's a classic in our house. VERY simple but not so healthy. It also cooks up real nice in a Dutch oven.
2 lbs. frozen hash browns ½ cup melted butter 1 tsp salt 1 tsp pepper ½ large onion chopped 1 can crème of chicken soup 1 pint of sour cream 10 oz. grated cheddar cheese 2 cups of bread crumbs
Melt butter and mix with all ingredients. Place in a 2 ½ quart casserole dish and top with additional bread crumbs if desired. Preheat oven to 350 and bake for 45 minutes.

At camp I usually add a can of hot chilis to this before it goes in the Dutch oven.
